I'm going to try making egg whites, spinach with salsa every morning... but I'm not sure what to eat at lunch.
Since the cafeteria food is out of the question now that I'm on a diet, i need to bring my own bagged lunch. I was planning on making peanut butter & jelly sandwiches every day, until I saw that peanut butter had 25% fat... What do you think?
And what for dinner?
Is it true that I should have a cheat day, like eat a bunch of shit on saturday to spead up my metabolism?

Well i wouldn't really worry about peanut butter sandwiches. Yes it has 25% fat, but fat is essential. If you don't get enough fat in your diet, then you're not going to lose weight as effectively. I'd say that a peanutbutter sandwich isn't a bad choice for lunch at all, especially since it's a nut fat (good fat). Also, as far as a cheat day goes, I personally would not. That cheat day will break the good habits you have formed and just make things that much harder for yourself. Instead, just eat different amounts of calories on each day. Like if your goal is to average 1400 calories/day, then just vary your caloric intake per day, but still have it average to 1400 over the course of a week.

Yeah man fat is good for you. Just not saturated or transfat (some is fine). I think you need variety in your meals or you will fall off the diet. What I do for eggs is 4 egg white and 4 whole eggs (feel free to scale down ) the yolk has tons of good shit in it. Other than that I'm not much help unless your trying to bulk, which it doesn't sound like it. (I aim for 6000 calories a day and usually hit it lol)

How exactly do fats fit into a diet? I know that 3500 calories = 1 pound... and is 1500 calories a day too low? I need to lose approx 1-2 pounds a week...

Depends. When I cut I do 2000 a day, but thats with working out 4 days a week for a couple hours. Also I'm training for a triathlon.

When I was eating right and good, my daily lunch (made the same thing everyday) was this:
Two pb and jays. Bag of nuts Protein shake Fruit cup Banana Cookies Water
Id eat that, one part every period, and then get a school lunch. By the time school was out I had over 2500 calories, ate snacks at home, dinner, dessert, over 3500 every day.
Now im out of school....get up at 11, eat something whatever I can find with protein and calories, hit the gym at 12, eat barely anything, get 2000 calories.

Well for breakfast right now I'm eating a mass gainer/protein shake. 4 eggs (usually more on a day that I got to the gym) and a bagel w/ cream cheese. That's average. After workout I go to tim hortons and get a breakfast sandwich and a coffee and a chocolate milk. Lunch is from the cafeteria which is run by a private catering company so it's always really good. Usually pasta and chicken or grilled cheese and fries. Supper can be whatever my mom makes lol in copious amounts. Plus throughout there is usually some snacks like cookies, fruit, veggies, pretzels, pop (soda for the Americans) or whatever I feel like. That's my average day but I don't worry to much as long as there us lots of calories and protein.

Bread for normal healing, because it is bargain and simple to make. Cakes/cooked pork chops for continued journeys, because they give more hearts per slot.

Alright man if you want to keep your metabolism in check then a cheat day or more than one a week is fine. Because if you are eating 6 small meals a day which you should (I will once I am out of school), then your metabolism will be working consistently but if you have something with not as many nutrients your now-strengthened metabolism is going to work even harder to burn that and more with the energy. Also I don't really count calories I just haven't drank soda in forever. Stick to water, milk, and fruit juices (apple, orange, etc.). I don't count calories because I know if I am eating decent foods and going to the gym at least 3 hours a day usually around 4, then I am burning plenty of calories and I have lost 10 lbs already and gained muscle. I was not fat but I have been burning any fat I have got on my stomach so my abs are showing more and more, I am also getting more cut. So to wrap it up, just try and stay away from saturated fats, excessive calories from unnecessary foods, fast food, soda, and just try to incorporate lots of water and fruits into your diet.
